Spicy Basmati Rice
This Instant Pot recipe from Veggies at Tiffani's is the perfect way to infuse incredible flavor into rice - add Chipotle Lime Coconut Jerky to transform a basic dish into something new and delicious.
Ingredients
1 cup white basmati rice, rinsed well
1 cup filtered water
1/2 cup white onion diced
1/2 cup chopped cilantro
1/3 cup Chipotle Lime Coconut Jerky
Zest of 1 lime
2 tablespoons fresh lime juice
1 large minced garlic clove
1 teaspoon sea salt
Handful of cilantro leaves

Directions
1. Add all ingredients except cilantro to an electric pressure cooker. Secure the lid and set the valve to the sealing position. Set to high pressure for 3 minutes.
2. After the cooker has naturally released all of the steam, switch the valve to the venting position, and carefully open the lid. Fluff with a fork.
3. Garnish with cilantro.
Makes 2-4 Servings.
